This cocktail appears in Albert Stevens Crockett’s Old Waldorf Bar Days from 1931. Crockett describes it as a Clover Club made with Jamaican rum, although the book curiously says “instead of Bacardi” even though its Clover Club recipe uses gin. The connection is clear either way: citrus, fruit syrup, and egg white, with Jamaican rum adding more weight and funk. This version uses grenadine in place of the Clover Club’s raspberry syrup, bringing a tart pomegranate note to the familiar sour structure.Cheers y’all!
Ingredients
- 2 oz · 60 mlJamaican rum
- ¾ oz · 22.5 mlfresh lemon juice
- ¾ oz · 22.5 mlgrenadine
- 1 tsp · 5 mlsimple syrup
- 1fresh egg white or other foamer
Method

Add all ingredients to a shaker tin.

“Dry shake” without ice.

Add ice and shake until chilled.

Strain into a chilled coupe or Nick and Nora.
