This one is an original of mine. I love any time I can combine pineapple and coffee. The process of making the pineapple distillate captures the essence of a pineapple in peak season, with all its succulent, bright, and juicy notes, but without the sweetness. Averna adds that bittersweet, herbal layer that ties it all together, and a touch of salt makes every flavor pop.Cheers y’all!
Ingredients
- 1½ oz · 45 mlpineapple distillate (Banhez)
- ½ oz · 15 mlAverna
- ½ oz · 15 mlcoffee liqueur
- 1 oz · 30 mlespresso
- ¼ oz · 7.5 mldemerara syrup
- 5 dropssaline solution
Method

Add all ingredients to shaker tin.

Shake with ice until chilled.

Fine strain into coupe or Nick and Nora.
- 4
Garnish with a pineapple frond.
