I’m teaming up with local bars and bartenders to recreate some of their original cocktails for Barmageddon, happening October 4–7 in Portland. Organized by the volunteer-run Portland Bar Coalition (@pdxbarcoalition), it’s a grassroots celebration of our bar community, with workshops, tastings, and parties around the city. This version of the Marshmallow-Rita comes from Mary Preble (@mary.prebs) for the SHUT IT DOWN! Bar Rescue pop-up at Suki’s II (@sukis_ii), taking inspiration from a cocktail actually featured on the show. It’s a Margarita riff that uses vodka as a vehicle for marshmallow flavor, with a small pour of tequila alongside the familiar triple sec and fresh lime. Mary’s version swaps the original marshmallow-flavored vodka for an infusion and finishes it with a toasted marshmallow. You can try it at Suki’s II during the pop-up on Tuesday, October 6 from 9pm until 1am!Cheers y’all!
Ingredients
- 1¼ oz · 37.5 mlmarshmallow-infused vodka (Smirnoff)
- ¼ oz · 7.5 mltequila blanco (Astral)
- ¾ oz · 22.5 ml fresh lime juice
- ½ oz · 15 mltriple sec
Method

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a rocks glass over fresh ice or large-format ice.

Garnish with a toasted marshmallow.
Marshmallow-infused Vodka
- 10 oz. mini marshmallows
- 750 ml. vodka
- 1
Combine and soak for four days, agitating every day.

Strain.
