This cocktail was created by Kevin Armstrong and Daniel Waddy at Street Feast’s Dinerama in London in 2018. It takes the Margarita in a softer, more perfumed direction, trading the usual orange liqueur and lime for bergamot, apricot, and lemon. Italicus supplies floral citrus and a gently bitter edge, while apricot rounds out the tequila without making the drink feel heavy. The result is bright, fragrant, and slightly softer than a classic Margarita, while still keeping the agave at the center. This one is definitely on the more tart end, but balanced nonetheless.
Dinerama closed in 2020, but the drink has lived on through Armstrong and Waddy’s work with Satan’s Whiskers (@satans_whiskers), appearing on later guest menus around the world.Cheers y’all!
Ingredients
- 1½ oz · 45 mltequila blanco
- ½ oz · 15 mlItalicus
- ¼ oz · 7.5 mlapricot liqueur
- ¾ oz · 22.5 mlfresh lemon juice

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a chilled coupe.

Garnish with a lemon wheel (dehydrated); optional.
