This drink is Stanley Clisby Arthur’s take on a cocktail his wife had in Mexico. In Arthur’s version, he subs out tequila for gin. In this recipe found in the book, Cure: New Orleans Drinks and How to Mix 'Em pineapple syrup is used instead of juice. This allows for better control of the acid, sweetness, and consistency.Cheers y’all!
Ingredients
- 2 oz · 60 mlgin
- 1 oz · 30 mlpineapple syrup
- ½ oz · 15 mlfresh lemon juice
- ½ oz · 15 mlfresh lime juice
- 1 fresh egg white or vegan alternative
- Peychaud’s bitters to spritz
Method

Add all ingredients to shaker tin.

Shake without ice (“dry shake”).

Add ice.
- 4
Shake until chilled.
- 5
Strain into glass filled with fresh ice.
- 6
Spritz Peychaud’s bitters over surface.
- 7
Garnish with mint.
