This cocktail was created by Shantelle Pace (@she_thebartender) as a bourbon riff on the Jungle Bird. Bourbon brings vanilla, oak, and baking spice to the familiar combination of bitter orange, pineapple, and lime. Using Aperol in place of the usual Campari gives it a softer bitterness and a brighter citrus character. It is tropical and refreshing, but the bourbon still comes through clearly.Cheers y’all!
Ingredients
- 1½ oz · 45 mlbourbon
- 1 oz · 30 mlAperol
- 1½ oz · 45 mlpineapple juice
- ½ oz · 15 mlfresh lime juice
Method
- 1
Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a rocks glass over fresh ice.

Garnish with pineapple fronds (optional) or pineapple slice.
