This cocktail was created by Scott Klopfer (@klopfuh) at Attaboy in Nashville in 2024 as a riff on Sam Ross’s Too Soon. The original pairs gin with Cynar, lemon, simple syrup, and orange slices shaken directly in the tin. Klopfer keeps that same basic structure but replaces the Cynar with equal parts Bruto Americano and Amaro Sibilla. Bruto brings bright citrus and a sharper bitterness, while Sibilla adds a darker, more earthy and herbal side. The orange slices soften some of that bitterness and add fresh citrus oils as the drink is shaken, making this feel very much like the Too Soon, just pushed in a more intensely amaro-driven direction.Cheers y’all!

- 1 oz · 30 mlgin
- ½ oz · 15 mlSt. George Bruto Americano
- ½ oz · 15 mlAmaro Sibilla
- ¾ oz · 22.5 mlfresh lemon juice
- ¾ oz · 22.5 mlsimple syrup
- 2orange slices
Method

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Fine strain into a chilled coupe.

Garnish with dehydrated orange slice (optional).
