This cocktail was created by Mike Ryan (@gastronaut) around 2008 and is a riff on Kyle Davidson’s Art of Choke, a modern classic created at The Violet Hour in Chicago that same year. Ryan keeps the Cynar, Green Chartreuse, lime, and demerara structure but swaps the original’s white rum for mezcal, then adds Peychaud’s, grapefruit oil, and chocolate bitters. Like the Art of Choke, it also breaks the usual rule by stirring despite containing lime juice, which is part of what makes the original template so unusual. The grapefruit oil is especially worth keeping here, adding a bright aromatic layer against all that bitter, earthy, and herbal character.Cheers y’all!
Ingredients
- 1 oz · 30 mlmezcal
- 1 oz · 30 mlCynar
- ¼ oz · 7.5 mlGreen Chartreuse
- ¼ oz · 7.5 mlfresh lime juice
- ¼ oz · 7.5 mldemerara syrup
- 2 dashesPeychaud's bitters
- grapefruit peel oil, to rinse
- 7 dropschocolate bitters, to garnish
Method

Express grapefruit peel oil into a rocks glass to coat the interior.

Add the remaining ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into the prepared glass over large-format ice.

Garnish with a mint bouquet and seven drops of chocolate bitters.
