This cocktail is a riff on the Chet Baker, originally created by Sam Ross at Milk & Honey. In this version, Tom Lasher-Walker (@oneminutemixology) swaps sweet vermouth for banana liqueur, giving the drink a softer, rounder sweetness while keeping it rum-forward. He created it at Fresh Kills in New York City in 2016, and I came across it in the newly published The Madrusan Cocktail Companion by @michaelmadrusan and @zaramadrusan.Cheers y’all!
Ingredients
- 2 oz · 60 mlaged rum
- ⅓ oz · 10 mlbanana liqueur
- 1 tsp · 5 mlhoney syrup
- 3 dropsmole bitters (Bittermens Xocolatl Mole)
- 2 dropssaline solution (20%)
- orange peel oil
Method

Add all ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into a rocks glass over large-format ice.

Express orange peel oil over the surface.

Garnish with an orange twist.
