A daiquiri might be my deathbed cocktail, and this one might just carry me there. I kept the classic build but added tiki bitters for depth. I love absinthe in daiquiris, so I made my first cocktail air—pineapple-absinthe for an ethereal lift. Light, herbal, and floating between here and beyond.Cheers y’all!
Ingredients
- 2 oz · 60 mlblended white rum
- ¾ oz · 22.5 mlfresh lime juice
- ½ oz · 15 mlsimple syrup
- 3 dashestiki bitters
- pineapple-absinthe air
Method

Add all ingredients to shaker tin.

Shake with ice until chilled.

Strain into coupe or Nick and Nora.

Top with pineapple-absinthe air.
Pineapple-Absinthe Air
- 5 oz. / 150 ml. pineapple juice
- 5 dashes absinthe
- 2 grams Lecithin powder
- 1
Add all to container (fine strain powder to prevent clumping).

Briefly mix with milk frother.

Continue aerating either an aquarium pump for quick airs.
