This cocktail was created by Yanni Kehagiaras at Stoa in San Francisco in 2023. It is a pretty perfect example of his approach to drinks at Stoa, where cocktails are built with four ingredients or fewer and generally avoid added sugar and garnishes. Here, mezcal does most of the heavy lifting, with a full ounce of Cynar bringing plenty of earthy bitterness and dry vermouth keeping everything lean. Punch describes it as a dry mezcal Manhattan, which feels like a pretty good way to think about it: smoky, bitter, herbal, and remarkably complex for only three ingredients.Cheers y’all!
Ingredients
- 1½ oz · 45 mlmezcal
- 1 oz · 30 mlCynar
- ½ oz · 15 mldry vermouth
Method

Add all ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into a chilled coupe or martini glass.
