This cocktail was created by Brenton Mowforth (@cheerstohappyhour) and shared on his Instagram. Honeydew and coconut make up most of the flavor here, with gin and Green Chartreuse bringing a more botanical, herbal side to what could otherwise lean pretty sweet and tropical. Fresh lime and soda keep it bright, and I especially like that the Chartreuse is used in such a small amount; it adds complexity without turning the drink into a Chartreuse cocktail. Brenton garnished his with a melon slice, but I used a dehydrated lime wheel.Cheers y’all!
Ingredients
- 1½ oz · 45 mlgin
- 1½ oz · 45 mlhoneydew cordial
- ½ oz · 15 mlfresh lime juice
- ½ oz · 15 mlcoconut cream
- ¼ oz · 7.5 mlGreen Chartreuse
- 6 dropssaline solution
- soda water, to top
Method

Add all ingredients except soda water to a shaker tin.

Add ice and shake until chilled.

Strain into a Collins glass over fresh ice.

Top with soda water.

Garnish with a melon slice (omitted; instead I used a dehydrated lime wheel).
HONEYDEW CORDIAL
- 250 ml. honeydew juice
- 50 g. sugar
- 2.3 g. citric acid
- 1
Add all ingredients to a container.

Stir until the sugar and citric acid are fully dissolved.
