The Irish Coffee is credited to chef Joe Sheridan, who created it at the Foynes flying-boat terminal in Ireland around 1943 to warm passengers delayed by bad weather. The classic combines Irish whiskey, hot coffee, sugar, and lightly thickened cream, with the coffee meant to be sipped through the cool layer on top. This version splits the sweetness between demerara and cinnamon syrups for a little extra richness and spice.Cheers y’all!
Ingredients
- 1½ oz · 45 mlIrish whiskey
- ¼ oz · 7.5 mlcinnamon syrup
- ¼ oz · 7.5 mldemerara syrup
- 4 oz · 120 mlhot coffee
- heavy cream, shaken then floated
- freshly grated cinnamon, to garnish
Method

Add the Irish whiskey, cinnamon syrup, and Demerara syrup to a warmed Irish coffee glass or mug.

Add the hot coffee and stir to combine.

Lightly shake the heavy cream until thickened but still pourable.

Float the cream over the surface.

Garnish with freshly grated cinnamon.
