I wanted something blended with coffee…because it’s summer and that’s what I need. As the name suggests, it’s my take on a frozen Carajillo with some aged tequila. Xanthan gum gives it body and make sure the cocktail doesn’t separate after it sits for a while.Cheers y’all!
Ingredients
- 2 oz · 60 mltequila reposado
- ¾ oz · 22.5 mlLicor 43
- ¾ oz · 22.5 mlcoffee liqueur
- 1 oz · 30 mlespresso
- pinch of salt
- ¼ tspxanthan gum
- 1 cup crushed ice, to blend
Method

Add all ingredients to a blender.

Add ice and blend until even incorporated.

Pour into glass.
- 4
Garnish with three coffee beans.
