This one is by Matthias Soberon (@servedbysoberon). It uses Mexican cane juice rum, which is similar in style to rhum agricole blanc with its grassy, earthy notes. Pineapple adds sweetness and pairs well with spice. A little mezcal over the top brings a nice amount of smoke on the nose.Cheers y’all!
Ingredients
- 1½ oz · 45 mlOaxacan rum
- ¾ oz · 22.5 mlpineapple liqueur
- ½ oz · 15 mlchile liqueur
- 1 oz · 30 mlfresh lime juice
- 1 barspoonmezcal to finish
- Tajín rim
Method

Add all ingredients except mezcal to shaker tin.

Shake with ice until chilled.

Strain into a Tajín rimmed coupe or Nick and Nora.

Layer a barspoon mezcal (or several mists) over the surface.
