This cocktail was created by the amazing photographer Jordan Hughes (@highproofpreacher) and is found in his book, “Twist.” This is a riff on the modern classic Penicillin by Sam Ross. He swaps out the honey-ginger syrup for demerara and highlights a touch of Aperol for added complexity.Cheers y’all!
Ingredients
- 1½ oz · 45 mlbourbon
- ½ oz · 15 mlAperol
- ¾ oz · 22.5 mlfresh lemon juice
- ½ oz · 15 mldemerara syrup
- 2 dashesAngostura bitters
- ¼ oz · 7.5 mlIslay scotch to float
Method

Add all ingredients to shaker tin.

Add ice and shake until chilled.

Strain into a glass over fresh ice.

Using the back of a barspoon, float Islay scotch over the surface.
- 5
Garnish with lemon twist.
