This cocktail was created by Ned King (@thecocktail_king) at Gigantic in Easthampton, Massachusetts, as a modern take on the Gem, a drink published in William Schmidt’s 1891 The Flowing Bowl. The original predates the Daiquiri and already combined rum, Cognac, lime, pineapple syrup, and cinnamon, making it an early example of what we would now recognize as a tropical-style sour. King modernized it by using Jamaican rum, dropping the additional sugar, and adding a dash of Angostura to tie the rum, pineapple, and spice together.Cheers y’all!
Ingredients
- 1 oz · 30 mlCognac
- 1 oz · 30 mlJamaican rum
- ¾ oz · 22.5 mlfresh lime juice
- ½ oz · 15 mlpineapple syrup
- 1 dashAngostura bitters
- freshly grated cinnamon, to garnish
Method

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a chilled coupe or Nick and Nora.

Garnish with freshly grated cinnamon.
