This cocktail was created by Doug Monroe at The Patterson House in Nashville in 2012 and later entered by Monroe into the Kindred Cocktails database. I came across it through Frederic Yarm (@fredericyarm), who recently shared it on his page. The name is a play on “rest in peace” and “pieces of eight,” although despite the pirate reference, it does not appear to be a direct riff on the classic Pieces of Eight. Cynar makes up most of the base, with a smaller pour of funky Jamaican rum underneath, while ginger, lemon, demerara, and Licor 43 bring spice, acidity, caramel, and vanilla around all that bitterness. The blackstrap rum rinse is a great finishing touch, giving you that dark molasses aroma before you even get into the drink.Cheers y’all!
Ingredients
- 1½ oz · 45 mlCynar
- ½ oz · 15 mloverproof aged Jamaican rum
- ¼ oz · 7.5 mlLicor 43
- ¾ oz · 22.5 mlfresh lemon juice
- ½ oz · 15 mlginger syrup
- ¼ oz · 7.5 mldemerara syrup
- 1egg white
- blackstrap rum, to rinse

Rinse a Collins glass with blackstrap rum.

Add remaining ingredients to a shaker tin.

Dry shake without ice.

Add ice and shake until chilled.

Fill the prepared glass with fresh ice.

Strain into the glass.
