Kicking off Pride Month with one of my original Negroni riffs. This one takes the White Negroni template and brings in pot still Jamaican rum and pineapple distillate, adding a little funk and ripe pineapple aroma without making the drink sweet. Bitter bianco and white vermouth keep that familiar bittersweet, spirit-forward structure. I served this one over a clear cube injected with rainbow colors for the occasion (thank you to @abstract_ice for the ice!).Cheers y’all!
Ingredients
- ¾ oz · 22.5 mlpot still Jamaican rum
- ¾ oz · 22.5 mlpineapple distillate (Banhez)
- ¾ oz · 22.5 mlbitter bianco
- ¾ oz · 22.5 mlwhite vermouth
- orange peel oil
Method
- 1
Add all ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into a rocks glass over large-format ice.

Express orange peel oil over the surface.
- 5
No garnish.
