This cocktail was created by Keith Waldbauer (@keithwaldbauer) at The Doctor’s Office (@tdoseattle) in Seattle. I visited last summer, and it was no surprise to see them named one of North America’s 50 Best Bars. I had this drink at the bar made by Keith himself and was stoked when Jason Alford (@thewhiskeymcgee) later shared the specs. It’s smoky, balanced, and a little surprising, with mezcal, amaro, and chili unfolding in layers that reward slow sipping.Cheers y’all!
Ingredients
- 1 oz · 30 mlmezcal
- 1 oz · 30 mlAmaro Montenegro
- ½ oz · 15 mlchili liqueur (Giffard Piment d’Espelette)
- ½ oz · 15 mlManzanilla sherry
- Calabrian chili pepper, to garnish
Method

Add all ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into a chilled coupe or Nick and Nora.

Garnish with a Calabrian chili pepper.
