I came across this one when Frederic Yarm (@fredericyarm) shared it recently and then read more about it on Imbibe. This cocktail was created by Aurele Berdoz at The Rhymers’ Club (@therhymersclub_nyc) in New York City as a tropical riff on the Intro to Aperol, which was created by Audrey Saunders. The Intro to Aperol is actually one of the first cocktails I ever made and photographed on Instagram, so this one felt like a fun full-circle moment. The pineapple and ginger push it in a brighter, more tropical direction while still keeping that familiar Aperol backbone.Cheers y’all!
Ingredients
- 1 oz · 30 mltequila blanco
- 1 oz · 30 mlAperol
- ¾ oz · 22.5 mlfresh lemon juice
- ¾ oz · 22.5 mlpineapple juice
- ½ oz · 15 mlginger syrup
- 2 dashesAngostura bitters
Method

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a rocks glass without ice or a chilled coupe.

Garnish with a dehydrated pineapple slice.
