Meet the Sparkling Mai Tai, a Martin Cate creation from Smuggler’s Cove (San Francisco, CA). Cate created it for Sunset magazine in 2011, and I had to reshake this one up for National Mai Tai Day. This one is a perfect effervescent drink for the patio.Cheers y’all!
Ingredients
- ½ oz · 15 mlaged rum
- ½ oz · 15 mldry curaçao
- ¼ oz · 7.5 mldark overproof rum
- ¼ oz · 7.5 mlfresh lime juice
- ¼ oz · 7.5 mlorgeat
- 4 oz · 120 mlsparkling wine, to top
Method

Add all ingredients except sparkling wine to shaker tin.

Add ice and shake until chilled.

Strain into a champagne flute or coupe.
- 4
Top with sparkling wine.
- 5
Garnish with lime twist and fresh mint.
