This cocktail was created by Saleh Amin (@onlyxdiz), a friend of mine I met through Instagram who sent me the recipe. I tried it, loved it, and ended up serving it at an annual Pride party, where it was a huge hit. Thai tea-infused pisco brings those familiar warm, spiced tea notes, while a little overproof Jamaican rum adds some funk underneath. Calpico gives the drink a creamy, slightly tangy quality that works surprisingly well with the fresh lime, and grapefruit bitters add another layer of citrus to round everything out.Cheers y’all!
Method

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a rocks glass over large-format ice.

Garnish with a grapefruit twist.
THAI TEA-INFUSED PISCO
- 750 ml. pisco
- ¼ cup Thai tea leaves
- 1
Combine pisco and Thai tea leaves in a sealable container.

Allow to infuse, tasting periodically until the Thai tea flavor is pronounced (about 45 minutes).

Fine strain to remove the tea leaves.

Bottle and store.
