This is one of my originals and a good reminder that honeydew deserves more love in cocktails. It can be such a delicate flavor that it is easy to bury, so I turned it into a cordial and kept the lime pretty restrained to let the melon actually come through. Basil gives it a fresh herbal edge, but rather than muddling it, I lightly press the leaves against the glass to release the oils without beating them up. A splash of soda and plenty of crushed ice keep it firmly in Collins territory. Simple, super refreshing, and very easy to crush on a hot day.Cheers y’all!
Ingredients
- 2 oz · 60 mlgin
- 1¾ oz · 52.5 mlhoneydew cordial
- ¼ oz · 7.5 mlfresh lime juice
- 6–8basil leaves
- splashsoda water
Method
- 1
Add basil to a Collins glass.
- 2
Lightly press the leaves along the sides of the glass to release their oils.

Add remaining ingredients.

Fill two-thirds full with crushed or pebble ice.
- 5
Swizzle to combine.
- 6
Add more crushed or pebble ice.
- 7
Garnish with fresh basil.
HONEYDEW CORDIAL
- 250 ml. honeydew juice
- 50 g. sugar
- 2.3 g. citric acid
- 1
Add all ingredients to a container.
- 2
Stir until the sugar and citric acid are fully dissolved.
