I created this cocktail for a paid PATRÓN campaign using PATRÓN Reposado and pairing it with BonBon. It is my riff on the Baby Turtle, originally created at Trick Dog, with additional inspiration from the One Foot Out the Door at Malpractice in Portland, Oregon, particularly its use of acid-adjusted grapefruit. A red bitter liqueur, grapefruit, and a touch of spice balance the sweeter ingredients, while the foamer gives the drink a soft, silky texture.Cheers y’all!
Ingredients
- 2 oz · 60 mltequila reposado (PATRÓN)
- ¼ oz · 7.5 mlred bitter liqueur (St. George Bruto Americano or Campari)
- 1 oz · 30 mlacid-adjusted grapefruit juice
- ½ oz · 15 mlcinnamon syrup
- ¼ oz · 7.5 mlgrenadine
- 1 dashsaline solution
- 1fresh egg white or other foamer
- cinnamon, to garnish
Method

Add all ingredients to a shaker tin.

“Dry shake” without ice.

Add ice and shake until chilled.

Strain into a rocks glass over large-format ice.

Garnish with a light dusting of ground cinnamon.
Acid-Adjusted Grapefruit Juice
- 100 ml. fresh grapefruit juice
- 2.7 g. citric acid
- 1.3 g. malic acid
- 1
Combine all ingredients.

Stir until the acids are fully dissolved.
