This cocktail was created by Matthias Soberon (@servedbysoberon). The name seems to point pretty clearly toward two drinks: the Palmetto, an old rum-and-sweet-vermouth Manhattan variation documented in The Savoy Cocktail Book in 1930, and the Black Manhattan, which Todd Smith created in 2005 by bringing amaro into the Manhattan template. Soberon takes that idea further with aged rhum agricole, Amaro di Angostura, Amontillado, and sweet vermouth, making it drier and more savory while keeping that dark, bittersweet profile.Cheers y’all!
Ingredients
- 1½ oz · 45 mlaged rhum agricole
- ½ oz · 15 mlAmaro di Angostura
- ½ oz · 15 mlAmontillado sherry
- ½ oz · 15 mlsweet vermouth
- 1 dashorange bitters
Method

Add all ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into a chilled coupe, Nick and Nora, or Martini glass.

Garnish with a cherry.
