Every year, Anu Shukla (@anushu802) drops his butter-pecan wash back into the world, and every year I swear it is the flavor of the season. He has done it with bourbon and he has done it with rum, so this time I met him in the middle and went split-base with bourbon and overproof Jamaican rum. I reached for some falernum bitters gifted to me by Michael Shea at Rum Club (@rumclubpdx), but Angostura or any aromatic bitters will get you there.Cheers y’all!
Ingredients
- 1 oz · 30 mlbutter-pecan-washed bourbon
- 1 oz · 30 mlbutter-pecan-washed overproof Jamaican rum
- ½ tsp · 2.5 mldemerara syrup
- ½ tsp · 2.5 mlmaple syrup
- 2 dashesaromatic bitters
- orange peel oil
Method

Add all ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into a rocks glass over large-format ice.

Express orange peel oil over the surface.

Garnish with a candied pecan.
BUTTER PECAN WASHED BOURBON & RUM
- 1 cup unsalted pecans
- 1 stick / 8 Tbsp. salted butter
- 750 ml spirit of choice (I used 375 ml overproof Jamaican rum + 375 ml bourbon)

Roast pecans at 375°F for 10 min.

Brown butter on low heat.

Combine pecans + butter and cool completely.

Add to spirit and refrigerate 24 hrs.

Freeze to separate remaining fats.

Fine strain through coffee filter.

Candy the butter-soaked pecans for a snack and garnish.
