This is a clarified version of a drink I made earlier this week (non-clarified version here). Pot still rum brings a little funk, then there’s coconut and banana for a round, creamy undertone. Guava is an underrated ingredient that balances it all. It’s tropical, easily scalable, and shelf stable.Cheers y’all!
Ingredients
- 1½ ozlight rum (pot still) (I used Probitas)
- ¼ ozcoconut rum (Planteray)
- ¼ ozbanana liqueur (Giffard)
- ¼ ozfalernum
- 1 ozfresh lemon juice
- 1 ozpink guava fruits & chunks
- 1½ ozwhole milk, to clarify
Method

Combine all ingredients except milk.

Stir and pour over milk.

Let sit for one hour (or longer) until milk curdles.

Slowly pour mixture into funnel with coffee filter or paper towel.

First drops will be cloudy, so swap out container when drops are clear.

Pass through cloudy portion until all is clear.

Store in sealed bottle.

To serve, pour over clear ice.

Garnish with mint bouquet after slapping it to express oils.
