This is my honeydew take on a Mojito, and probably the more obvious direction to go once I had a batch of honeydew cordial sitting in the fridge. White rum, lime, mint, and soda already give you that familiar Mojito framework, but the honeydew slides in really naturally and makes the whole thing a little softer and fruitier. I added just a teaspoon of honey syrup to round things out without covering up the melon. It is bright, super refreshing, and exactly the kind of drink I want packed with crushed ice in the summer.Cheers y’all!
Ingredients
- 2 oz · 60 mlwhite rum
- 1½ oz · 45 mlhoneydew cordial
- ½ oz · 15 mlfresh lime juice
- 1 tsp · 5 mlhoney syrup
- 6–8mint leaves
- splashsoda water
Method

Add mint to a Collins glass.

Lightly press the leaves along the sides of the glass to release their oils.

Add remaining ingredients.

Fill two-thirds full with crushed or pebble ice.

Swizzle to combine.

Add more crushed or pebble ice.
- 7
Garnish with fresh mint.
HONEYDEW CORDIAL
- 250 ml. honeydew juice
- 50 g. sugar
- 2.3 g. citric acid
- 1
Add all ingredients to a container.

Stir until the sugar and citric acid are fully dissolved.
