This cocktail was created by Felix Woods (@flxwds) at Black Pearl in 2021. Gin and pisco make a bright, aromatic base, while the peach stays light and does not turn the drink overly fruity. Orange bitters add a little spice behind the citrus, and the egg white gives everything a soft, frothy texture.Cheers y’all!
Ingredients
- 1 oz · 30 mlgin
- ½ oz · 15 mlpisco
- ¼ oz · 7.5 mlpeach liqueur
- ¾ oz · 22.5 mlfresh lemon juice
- ½ oz · 15 mlsimple syrup
- 2 dashesorange bitters
- 1fresh egg white or other foamer
Method

Add all ingredients to a shaker tin.

“Dry shake” without ice.

Add ice and shake until chilled.

Strain into a rocks glass over large-format ice.

Garnish with a mint bouquet.
