This cocktail was created by Carl Busch (@carl.busch) in 2022. It is a simple twist on a Bee’s Knees, where Busch splits gin with the beautiful Amaro Nonino. This alteration adds an extra layer of complexity, a bit of bitterness, and richness to the classic. Looking for a cocktail besides a Paper Plane for that amaro, this is it.Cheers y’all!
Ingredients
- 1 oz · 30 mlgin
- 1 oz · 30 mlAmaro Nonino
- ¾ oz · 22.5 mlfresh lemon juice
- ¾ oz · 22.5 mlhoney syrup
Method

Add all ingredients to shaker tin.
- 2
Shake with ice until chilled.

Fine strain into coupe or Nick and Nora.
- 4
Garnish with lemon twist.
Honey Syrup
- 1
I make mine by mixing 3 parts honey to 1 part water.

Heat on low until mixed and bottle.
- 3
On occasion I’ll do 2 parts honey to 1 part water.
- 4
I advise against 1:1 as it will be too dilute
