The Carajillo is one of the most popular drinks in Mexico for good reason. It is simple, comforting, and delicious. The classic version is just espresso and Licor 43, a Spanish vanilla-spiced liqueur. Adding tequila is not traditional, but the flavor fit is natural. Isaiah (@onesipclub) and I were talking about seasonal ideas and this one came together quickly. It surprised me in the best way. I have already made several and December has barely started. Save this for the colder months because it works for any holiday moment.Cheers y’all!
Ingredients
- 1 oz · 30 mltequila reposado
- 1 oz · 30 mlLicor 43
- 1½ oz · 45 mlespresso
- eggnog foam, to top
- freshly grated nutmeg, to garnish
Method

Add the tequila reposado, Licor 43, and espresso to a mixing glass.

Add ice and stir until chilled.

Strain into a rocks glass over large-format ice.

Top with eggnog foam.

Garnish with freshly grated nutmeg.
EGGNOG FOAM
- 2 oz · 60 ml. eggnog
- 1 tsp · 5 ml. cinnamon or vanilla syrup
- extra nutmeg (optional)

Combine all.

Froth until it is thick and pillowy (I used a milk frother).
