This cocktail was created by Steven Crane at The Luau in Beverly Hills around 1958. It is often described as a tweaked Zombie, although it also closely follows Donn Beach’s earlier Test Pilot, with the same general combination of rum, citrus, falernum, and spice. The recipe published in Smuggler’s Cove calls for three different rums, but I simplified mine down to two, using Planteray OFTD as the main base alongside a Demerara rum. OFTD is already a blend of rums from Guyana, Jamaica, and Barbados, so it still brings plenty of character to the drink. Grapefruit, lime, falernum, and cinnamon round it out, with small amounts of absinthe and Angostura bitters adding the final layer of spice.Cheers y’all!
Ingredients
- 1½ oz · 45 mlblended overproof rum
- 1 oz · 30 mlDemerara rum
- ½ oz · 15 mlfalernum
- ½ oz · 15 mlfresh grapefruit juice
- ½ oz · 15 mlfresh lime juice
- ½ oz · 15 mlcinnamon syrup
- 1 dashabsinthe
- 1 dashAngostura bitters
Method

Add all ingredients to a blender tin or shaker tin.

Add a small amount of crushed or pebble ice.

Flash blend for 5–10 seconds, or whip shake until the ice is mostly dissolved.

Dump into a glass.

Top with additional crushed or pebble ice.

Garnish with a spent lime shell and rum-soaked sugar cube.

Ignite and sprinkle with cinnamon (optional).
