Meet the modern classic created by Audrey Saunders in 2005 when she opened the legendary Pegu Club (NYC; now closed). This was her take on a house Manhattan. The idea of swapping an amaro in for the bitters occurred to Saunders during a dinner at the New York restaurant Raoul's. Saunders preferred Rittenhouse when they created it.Cheers y’all!
Ingredients
- 2 oz · 60 mlrye whiskey
- ¾ oz · 22.5 mlsweet vermouth
- ½ oz · 15 mlCynar
Method

Add all ingredients to mixing glass.

Stir with ice until chilled.

Strain into a coupe or Nick and Nora.
- 4
Garnish with maraschino or brandied cherry.
