This cocktail was created by Elliott Clark (@apartment_bartender) and I found it in his new book, “Let’s Do Drinks.” As we celebrate the first day do October, it’s time to break out the fall spices and make a seasonal sour. Chai syrup has notes of star anise, cloves, ginger, cinnamon, and cardamom, that work well with a dark aged rum.Cheers y’all!
Ingredients
- 2 oz · 60 mlaged rum
- 1 oz · 30 mlfresh lemon juice
- ¾ oz · 22.5 mlchai syrup
- dry red wine to float
Method
- 1
Add all ingredients except wine to shaker tin.

Add ice and shake until chilled.

Fine strain into a glass over fresh ice.

Float dry red wine over surface (pour on ice or back of spoon).
- 5
Garnish with star anise.
