This is an original Mai Tai riff that I made while grading exams. I kept the classic rum, dry curaçao, lime, and orgeat structure, then added a touch of pineapple liqueur and skipped the simple syrup. The split base of grassy rhum agricole and overproof Jamaican rum gives it plenty of character, while the pineapple adds just enough extra tropical fruit to the mix.Cheers y'all!
Ingredients
- 1 oz · 30 mlrhum agricole
- 1 oz · 30 mloverproof Jamaican rum
- ¼ oz · 7.5 mldry curaçao
- ¼ oz · 7.5 mlpineapple liqueur
- ¾ oz · 22.5 mlfresh lime juice
- ½ oz · 15 mlorgeat
Method

Add all ingredients to a shaker tin.

Add a small amount of crushed ice and whip shake until chilled.

Dirty dump into a glass.

Top with crushed or pebble ice.
- 5
Garnish with a mint bouquet after slapping it to express the oils and a spent lime shell.
