Joaquin Simó created this in 2011. Simó was working on a Last Word riff when he first tried a Paper Plane by Sam Ross at Milk & Honey. This led him to explore more complex liqueurs like Aperol to replace maraschino. Aperol and Chartreuse are a perfect marriage; he found that Del Maguey Chichicapa mezcal worked beautifully here.Cheers y’all!
Ingredients
- ¾ oz · 22.5 mlmezcal
- ¾ oz · 22.5 mlAperol
- ¾ oz · 22.5 mlYellow Chartreuse
- ¾ oz · 22.5 mlfresh lime juice
Method
- 1
Add all ingredients to shaker tin.
- 2
Shake with ice until chilled.
- 3
Fine strain into coupe or Nick and Nora.
- 4
Garnish with lime twist.
