I’ve had this idea in my head for a while to combine a Clover Club and Ramos Gin Fizz (named after the song by Zach Bryan). It’s creamy, tart, and has a soft fizz. The absinthe isn’t traditional in either, but it steps in where orange flower water usually goes to keep it interesting.Cheers y’all!
Ingredients
- 2 oz · 60 mlgin
- ½ oz · 15 mldry vermouth
- ¾ oz · 22.5 mllemon juice
- ¾ oz · 22.5 mlheavy cream
- ¾ oz · 22.5 mlraspberry syrup
- 1 egg white
- 4 dashesabsinthe
- soda water to top
- orange peel oil
Method

Add all ingredients to shaker tin.

Whip shake with two ice cubes (until you no longer hear ice).

Pour into Collins glass.

Top with soda water to brim.

Chill for 3–5 minutes in freezer (or fridge).

Poke hole in center with straw and add more soda water (or pour down barspoon) until foam rises over glass.

Express orange peel oil.

No garnish.
