Frederic Yarm (@fredericyarm) created this as a riff on the Krakatoa he first had at Drink in 2008 (Batavia Arrack, Fernet, demerara, Angostura, and flamed Chartreuse) and later made himself behind that same bar. Instead of lighting the Chartreuse on fire, he folded it into the mix and added banana liqueur to play with the Fernet. The name references the Sacred Monkey Forest in Indonesia, where Batavia Arrack is produced, a place where the monkeys will absolutely bite if you are not careful. This drink has a similar energy.Cheers y'all!
Ingredients
- 2 oz · 60 mlBatavia Arrack
- ¼ oz · 7.5 mlFernet Branca
- ¼ oz · 7.5 mlGreen Chartreuse
- ¼ oz · 7.5 mlbanana liqueur
- ¼ oz · 7.5 mldemerara syrup
- 2 dasheschocolate bitters
- Islay Scotch, to rinse
Method

Rinse a chilled coupe with Islay Scotch and discard the excess, or use an atomizer.

Add remaining ingredients to a mixing glass.

Add ice and stir until chilled.

Strain into the prepared glass.
