This cocktail was created by Zack Gelnaw-Rubin (@zgrcocktails) at Attaboy in New York City in 2012. It is a riff on another of his drinks, the Bicycle Thief, which he created with Abraham Hawkins at Dutch Kills in 2010. In this version, grapefruit juice is swapped for pineapple, giving the drink a softer tropical edge that plays nicely with Campari’s bitterness. Hello, Jungle Bird!Cheers y’all!
Ingredients
- 1 oz · 30 mlgin
- Campari1 oz · 30 ml
- 1½ oz · 45 mlpineapple juice
- ½ oz · 15 mlfresh lemon juice
- ½ oz · 15 mlsimple syrup
- soda water, to top
Method

Add all ingredients to a shaker tin.

Add ice and shake until chilled.

Strain into a Collins glass over fresh ice.

Top with soda water.
- 5
Garnish with an orange wheel.
